Crappie Gumbo

Ingredients.

1 lb. Crappie Fillets, Cut Into Bite Size Pieces
1/4 Cup Butter
1/2 Cup Chopped Onion
1 Small Green Pepper, Chopped
1 Clove Garlic, Chopped
1/2 Cup Celery, Chopped
1 (28 oz.) Can Tomatoes
1 lb. Okra, Fresh Or Frozen
1 Cup Water
1/4 Tsp. Thyme
1/4 To 1/2 Tsp Crushed Red Pepper (Depending On Your Spice Preference)
to Taste Salt And Pepper
2 Cups Cooked Rice
To Taste Tabasco Sauce

Directions.

In Large Soup Pot, Melt The Butter. Saute The Onion, Green Pepper, Garlic, And Celery Until Tender.

Add The Tomatoes, Okra, Water, Thyme, Red Pepper, Salt, And Pepper. Simmer For 20 Minutes. Stir Occasionally.

Add The Crappie And Cook For 10 - 15 Minutes Or Until The Fish Starts To Flake.

Serve Over Cooked Rice In Individual Bowls. Season To Taste With Tabasco Sauce.

Here Is A Little Twist That I Like To Do Once In A While, Once Every Thing Is Hot Add A Pint Of Heavy Cream Heat Back Up And Thicken With Corn Starch Yum Yum Yum It Makes It Like A Chowder. YUM YUM YUM .

Sound similar to "courtbouillon".... just a few differences......Great recipe Mike!!!

This recipe I have tried with catfish and striper fillets and its a winner good one Mike!!!
