Spicy Catfish Fillets.

1/4 Cup Buttermilk
2 Teaspoons Dijon Mustard
1/2 Cup Cornmeal
1 Teaspoon Seasoning Salt
1 Teaspoon Paprika
1 Teaspoon Onion Powder
1/2 Teaspoon Garlic Powder
1/2 Teaspoon Dried Thyme
1/2 Teaspoon White Pepper
1/2 Teaspoon Black Pepper
Catfish Fillets
Lemon Wedges
1/2 Cup Of Instant Potato Buds Or Crushed Corn Flakes

Directions.

1. Preheat Broiler. Spay Wire Rack With PAM Large Enough To Hold Fish In A Single Layer, Now Place The Rack On A Baking Sheet That Has Sides So Any Liquids Won't Drip Off The Pan. (Don't Use Broiler Pan It Is Real Hard To Flip The Fish)

2. Whisk Together Buttermilk And Mustard In A Medium Bowl Until Smooth. Combine Cornmeal, Seasoning Salt And Paprika, Onion Powder, Garlic Powder, Thyme, White Pepper And Black Pepper In A Shallow Dish. Dip Each Fillet In The Buttermilk Mixture, Making Sure That Each Fillet Is Well Coated. Next Go To The Cornmeal Mixture, Turning And Shaking Off Excess Cornmeal, Now Return To Buttermilk Dip Again, Now Place In Instant Potato Buds Or Crushed Corn Flakes(My Favorite) Now Shake Off Excess. Place The Fillets On Broiler Rack That You Have Sprayed With PAM, And So They Do Not Touch As They Will Stick Together While They Cook.

3. Broil Fillets Till They Are White In The Center Ovens Will Very On How Long So Keep A Close Eye On The.Now When Done Serve Hot With Lemon Wedges And Your Favorite Tarter sauce I Even Like To Melt A Little Butter To Spoon Over The Top.

That will work right there....I think I'll try that on some redfish soon.
