Salmon in Foil Marinade.
Ingredients.
1/4pint (150ml) white wine
3 tbsp olive oil
1 tsp paprika
salt and pepper
1 tbs lemon juice
1 ts sugar
fresh parsley
4 1" (2.5cm) salmon steaks
olive oil
Directions.
Mix the ingredients for the marinade and pour over the salmon - leave for about 30 minutes.
Take four pieces of foil and brush with oil - on the shiny side. Place the salmon steaks in the middle and bring up the edges.
Pour the marinade equally between the parcels and then seal tightly.
Place over the coals for about 20 minutes - open the parcel towards the end of the cooking time for the smoke to flavour the salmon.
