Broiled Catfish.
Ingredients:
1 tablespoon plus 1-1/2 tsp. soy sauce
1 1/2 teaspoons lemon juice
1/8 teaspoon garlic powder
1 teaspoon liquid smoke
8 ounces catfish fillets
vegetable cooking spray
Directions.
In a small bowl, combine soy sauce, lemon juice, garlic powder and liquid smoke.
Preheat broiler pan for 5 minutes, then coat broiler pan with vegetable cooking spray.
Place catfish fillets on the broiler pan. Brush with the smoky basting sauce. Broil 3 inches from the heat source for 5 to 7 minutes, basting occasionally, or until the catfish flakes easily.
Serves 2.
