Folks this recipe is easier than it seems and you will be very pleased with it once you sit down to chow, be sure you make extra you will want seconds.

Baked Pike Fillets

Ingredients

8 northern pike fillets

3 egg yolks

1 and one half cups of milk

3 tbsp. flour

2 tbsp. butter

about one half can of peaches

1 tsp lemon pepper

1 tbsp. salt

1 tsp. pepper

2 tsp. thyme

1 tbsp. chopped fresh parsley

1/2 tsp. garlic powder

Preheat the oven to 350F.

Simmer pike in salted and peppered water until tender.

Mix flour and butter in a double boiler. Add milk to make a sauce. Add seasonings to sauce and salt to taste. Place pike in a greased dish, cover with sauce and peaches then bake for 15 minutes.

Cooks note--- Make biscuits to swipe up all the sauce on your plate.

Sounds like a really good recipe, Mike! I'll have to try some of the fish recipes next winter, as I'm sure that I will have some fish in the freezer!
