Magic Dust Spice Mix Recipe
Champion BBQ pitmaster and restaurateur Mike Mills came up with this spice mix that he calls Magic Dust. It can be used on any type of food, barbecued or not. The heat level can be adjusted up if you like it extra spicy.
Prep Time: 5 minutes
Ingredients:
• 1/2 cup paprika
• 1/4 cup kosher salt, finely ground
• 1/4 cup sugar
• 2 tablespoons mustard powder
• 1/4 cup chili powder
• 1/4 cup ground cumin
• 2 tablespoons ground black pepper
• 1/4 cup granulated garlic
• 2 tablespoons cayenne
Preparation:
Mix paprika, kosher salt, sugar, mustard powder, chili powder, cumin, black pepper, garlic, and cayenne together and store in a tightly covered container.
You'll want to keep some in a shaker next to the grill or stove. Keeps indefinitely but won't last long.
Chef's Note: To make it a little more hot and spicy, increase the mustard powder and black pepper to 1/4 cup each.
Daddy's Lip Smackin Sweet bbq sauce and rib glaze
I made this recipe corn syrup and sugar free:
1 Cup Organic Ketchup(sweetened with Agave instead of Corn Syrup; from Whole Foods); or substitute Tomato Sauce or Paste(if so, add an additional 1/4 cup of honey)
2 Cups Apple Cider Vinegar
1 Half Cup Honey
4 TBSP Onion Powder
3 TBSP Garlic Powder
2 TBSP Mustard
1 TBSP Cayenne Pepper
1 TBSP Sea Salt
Blend and simmer on medium heat for 30 minutes. Chill to thicken.
