| Looks good Mike. The wheat is coming along nicely. I think I'm about ready to rack it into another jug. I've got a jug of apple and about ever time I think it's ready to bottle the water in the air lock looks like the yeast is still working. Guess I'll give it more time. | |

| Hey Ridge or anyone else that makes wine, have you ever tried the new (BETTER BOTTLES) yet, i just bought 2 of the 5 gallon carboys and am going to give them a shot and see how they work. There is lots of good talk about them, but i have heard from some that plastic jugs scratch easy so leaving them open to germs. The way i feel about that is that i sanitize and kill all germs any how, i think that is all that needs to be done to be safe, here is a link to were i buy all my stuff and the ( BETTER BOTTLES) this place is only 100 miles from my front door. http://www.midwestsupplies.com/winemaking-equipment/fermentation-equipment/better-bottles-accessories.html | |

| I use 5 gallon water jugs and they look like the same thing. I don't think you have to worry about scratches if they are new. I cleaned my jugs with carboy brushes and it worked out ok. I do agree if you sanitize anyway there shouldn't be any bugs there. Hey one tip I picked up along the way is when you fill a 5 gallon jug put it in a empty milk crate first. That way it's easier to move around. | |

| We bottled up a bunch more wine last night I only remember a few flavors. Grape. Strawberry. Mango/Orange/Peach. Pineapple. Pineapple/Orange. I think there was 1 more but i can't remember it, this is before we started putting labels on them. Then we run out of label paper. Should have the other paper by the middle of this week. | |

| Dandelion Wine is not an easy one to make it took me 2 hours to pick and trim the flowers needed to make the 2 quarts, you would think that it would be easy and fast for as many of the Dandelions i have in my yard but it's not. Dandelion wine was my dads favorite wine when he was still here and thought i would give it a try and see what is so great about it, here is a pick of the flowers steeping in the hot water, it has to steep for 2 days this way. Today i boiled it up and put the sugars in it, then let it cool and added the yeast nutrient and the yeast and put it under air lock for the cooking it is some strange looking stuff but when i tasted it it tasted like tea and i should add that it tasted better than some teas i have drank. | |

| Hey Mike, Papa and I picked some pie cherries yesterday - you know the little tart red ones. He's making pies and I'm making wine. I thought I had picked 10 pounds but when I got them home and weighed them I only had 5 1/2 pounds. It was enough for the wine though. I added some frozen pie cherries from the store too. So I used 6 pounds of cherries and a little over 3 lbs of sugar. The starting gravity was 1.094 so I think it will make a nice sweet wine. I wound up with almost a half gallon of juice left over. I think the next wheat beer I make I'll put the cherry juice in it to make cherry wheat beer. | |
